Yobani grows her coffee according to biodynamic principles, which means that she strives to create the healthiest soil possible. This is achieved through composting, integrating animals, shade crops and crop rotation. treating the farm as a closed but diverse ecosystem and treating the compost to stimulate the microbial life necessary for rich soil fertility. This means using manure, plant material and soil to convert them into a powerful source of energy for the agricultural organism. Yobani produces great coffee, creamy and fruity, and this one is no different. But it was actually the balance that we fell in love with when we got this particular lot. It's no secret that we like fruity and bright coffees. When those fruit notes are paired with an amazing sweetness, we really fall in love with a coffee. The fruitiness of this lot is a bright, ripe pomegranate and is perfectly balanced with a creamy mouthfeel, deep sweetness and caramel notes. This is a coffee we could drink all day long.
